Chicken Dum biryani

The most favorite, aromatic dish usually prepared as a lunch meal or dinner meal.
Ingredients
200 gms Chicken
2 Onions chopped(Julian)
2 Onions chopped(diced)
5 cloves garlic, crushed
1 small piece ginger, crushed/grated
1/2 cup yoghurt or fresh cream
1 tablespoon chilly powder
2 piece cinnamon sticks
10g cloves
2 tablespoon biryani masala
2 cups basmati rice
100 gms mint leaves
2 bay leaves
8 tablespoon vegetable oil
4 cloves cardamom
20 gms cilantro/coriander leaves
For marination
Add chicken, 2 tablespoon oil, biryani masala, crushed ginger, garlic, yoghurt, 1/2 tablespoon chilly powder, cloves to the bowl and mix it well and keep it aside atleast for 10 mins.
Method
(optional) Take a pan and 4 tablespoon vegetable oil, add the chopped(julian) and fry it until it turns crispy and brown. Transfer it to a plate by extracting the oil away by placing a paper towel. Rest it aside. This we use it for decoration at the end.
Add a tablespoon oil if there is no oil left, into the same pan. Add onion(diced) into it and saute until it turns translucent. Add the marinated chicken, mint leaves(save a little for the dum) and let it cook for 10 to 15 minutes until the chicken is cooked well.
In the meantime, add water to a pot and let it to boil. Add 2 cinnamon sticks, 4 cloves cardamom, bay leaves, a tablespoon oil. After a minute add 2 cups basmati rice into it. Let it cook but not fully done. Remove the rice when its almost cooked, by using a strainer drain out the water.
For the dum, you can use the same pot. Add the cooked 1/2 of the rice to layer it and then add the cooked chicken from the pan and add the remaining rice on top of it. Add the mint leaves, cilantro and the fried onions on top of it for decoration. Close the lid of the pot tight. Use dough to cover the lid. Alternately, you can keep a hot water in a pot and place it on top of the lid which will ensure it is covered fully. Slim down the stove and let it cook for 15 to 20 minutes.
Server it to plates and add extra mint or crispy onions if required.
