Vegetable kurma

Too many ingredients always makes the dish look more complicated than it actually is. This south Indian curry is one among them. The delicious vegetable kurma with made mainly with three important things, vegetables, coconut and spices.


Ingredients(Serving 2)


Vegetables

1 carrot(chopped)

100 gms peas

50 gms green beans(chopped)

1 kohlrabi(chopped)

1 medium sized onions(julian)

1 cup grated coconut

Fresh coriander


Spices

1 tsp mustard seeds

1 tsp chilli powder

1 tsp coriander powder

1 tsp garam masala

¼ tsp turmeric

1 tsp ginger/garlic paste

2 tsp vegetable oil/coconut oil

¾ tsp salt

1 bay leaves (optional)

1 tsp cumin


Method


  1. To a pan on the stove in medium flame, add oil and then mustard seeds, bay leaves, cumin. Once the mustard starts cracking add onions and saute until it turns translucent.

  2. Add the ginger/garlic paste and mix it well. Then add all the mixed veggies and the remaining spices(chilli powder, coriander powder, garam masala, turmeric). Give it a good stir.

  3. Add ½ cup to it and mix it well. Close the lid and let it cook for five minutes on medium flame.

  4. To a blending jar, add the grated coconut, poppy seeds(optional) and blend it to a fine paste.

  5. After five to seven minutes of cooking the vegetables, add the blended coconut paste to it and mix it well. Add another ½ cup of water if required and cook for another five minutes.

  6. When the vegetables are cooked, add fresh coriander, mix it well and enjoy.
