Stuffed "Pepper" Chicken

Today papri got assaulted! It turned out into a delicious stuffed pepper chicken. With less preparation time this recipe serves well for supper. The colorful paprika also has a variety of beneficial compounds, not just vitamins but also antioxidants. It prevents inflammation and improves your cholesterol.


Ingredients ( serving 2)

2 Peppers

150 gms minced chicken

1 1/2 tsp salt

1 tsp paprika powder/chili powder

1 tsp cumin powder

1 tsp coriander powder

1 tsp garlic powder or crushed fresh garlic

1 tsp basil(optional)

1 tsp oregano(optional)

3 tsp olive oil

1 onion (diced)

2 tomatoes(diced)

1 spoon garlic crushed

50 gms mozzarella shredded cheese(optional)


Method


Using Oven:

  1. Remove the head of the paprika and place it in the baking pan. Preheat the oven to 200-degree Celsius.

  2. Place the pan in the oven for 10 minutes.

  3. Remove the pan from the oven. The paprika will be half cooked at this time.


Using stove:

  1. Remove the head of the paprika and on medium flame, place a shallow frying pan and add the paprika.

  2. Keep flipping and frying every minute for 8 to 10 minutes. Remove the paprika when it turns to little brown on the sides.


Chicken:

  1. On medium flame, place a frying pan and add olive oil.

  2. Add onions, crushed ginger garlic and saute it well.

  3. Add tomatoes and cook them for 4 minutes.

  4. Add all spices like coriander powder, cumin powder, basil, oregano, salt, chili powder, garlic powder.

  5. After a minute, add the minced chicken, mix it well, and cook for 10 minutes.

  6. (Optional if you are using the stove): Take a small portion of the chicken and add it to a different pot, add chicken stock/veg broth or just water and mix it well. This is used to cook the stuff peppers on the stove.


Using Oven:

  1. Add chicken and mozzarella(optional) in the peppers.

  2. Preheat the oven for 180 degrees celsius and bake for 20 to 25 minutes.

  3. Check in-between to see in case if it’s getting burnt.

  4. Remove it from the oven and enjoy!


Using Stove:

  1. On low-to-medium flame, place a pot and add the chicken which we made earlier with the chicken stock. Place the stuffed pepper chicken on top of it. Close the lid of the pot and cook for 15 minutes. Occasionally check and add chicken stock if required in order to maintain the liquid consistency.

  2. Transfer to a plate and enjoy!
