Shakshuka

This dish is a quick breakfast idea with eggs. Has been a delight every time I made it, hence I wanted to add this to my blog.


Ingredients(Serving 3)

1 medium sized onion chopped

2 medium size tomatoes chopped

1/2 tsp tomato paste

3 bell peppers chopped

2 clove garlic

1/2 tsp salt

1/2 tsp cumin

1/2 tsp chilli powder

1/2 tsp coriander powder

2 spoons of vegetable oil(your choice)

fresh coriander for garnish(optional)

50gms feta cheese

3 eggs


Method

  1. To a pan on the stove with medium heat, add oil, cumin. Wait for cumin to release its aroma, then add chopped garlic cloves and fry it.

  2. Once the garlic is fried, add onions and saute until it’s translucent. Then add tomatoes and cook it for 3 minutes.

  3. Add tomato paste and mix it well. Then continue to add bell peppers, mix it well again and cook it for another 2 minutes before adding chilli powder, salt, coriander powder. Give it all a good mix. Close the lid and cook for 4 minutes.

  4. Remove the lid and make space for the eggs in the pan and break the eggs.

  5. Add feta cheese on top of it. Close the lid and cook for 2 minutes on low flame.

  6. Once the eggs are almost done or according to your liking sprinkle fresh coriander and remove the pan from the stove and serve along with bread.
