Vegetable Pulao

Vegetable pulao is one of the most easiest vegan dish to cook. It does look more complicated with lot of ingredients. You can literally add any vegetables you like or skip the ones mentioned here.This can be made using pressure cooker or on a pot(both methods are available below).
Ingredients
1 cup beans chopped
1 cup green peas
1 cup carrot chopped
1 cup Kohlrabi
4 cloves garlic
2 piece ginger
3 green chillies
1 onion Julian cut
1 cup cauliflower chopped
1 cup mint leaves
1/2 cup coriander leaves
salt to taste
2 bay leaves
2 star seeds
1 tsp cumin seeds
3 tsp vegetable oil
5 cloves cashews
2 cut cardamom
1 cup basmati rice
1 1/2 tsp garam masala (optional)
1/2 coriander powder (optional)
Ingredients for Raita
1/2 cup cucumber
1/4 tsp salt
1/2 cup yoghurt
Method

1. In a blending jar add ginger, garlic, green chillies, mint leaves, coriander leaves and blend to a fine paste. This will be the raw masala for the pulao.
2. Place the pot or the cooker on stove and heat it. Add vegetable oil, once its slightly hot add bay leaves, star seeds, cumin seeds and cashews. Stir until its aromatic or until the color of cashews changes slightly to golden brown.
3. Now add the julian cut onions and saute until its translucent. Add the blended masala to the pot and cook it for a minute.
4. Add all the vegetables and a tsp of salt. Saute it for couple of minutes. Add 1/4 cup of water. Let it boil. Check for the salt and spices at this stage. If you feel salt or spice is required add the salt or the garam masala for the spice.
5. Add the basmati rice to the pot and add water. The quantity of water and rice here will be 2:1. Let it boil, it would take approximately 4 to 5 minutes it high flame. If you are pressure cooking then close the pressure cooker lid and wait for 2 whistles. Remove it from the stove and wait until the steam is fully gone. If you are cooking without pressure then slim the flame on the stove and cook it for 10 to 15 minutes. Occasionally check to see if the rice and vegetables are cooked. Once done serve it to plate and enjoy!
Method( to make Raita)
To a cup, add diced cucumber, yoghurt, pinch of salt and mix it well.
Optionally, you can add chat masala and mix it.
