Baked potato chips and chicken

Sometimes simple ingredients turn out into exotic dish. Our conscious choice is always to eat healthy and still enjoy the food. This dish can be enjoyed as the evening snack or post workout meal as well.
Ingredients for chicken marination
1 1/2 tsp salt
1 tsp paprika powder/chilli powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp garlic powder or crushed fresh garlic
half lemon squeezed juice
1 tsp basil(optional)
1 tsp oregano(optional)
2 tsp olive oil
Ingredients for chicken
200 gms minced chicken
1 onions(diced)
2 tomatoes(diced)
20 gms cilantro
4 potatoes(sliced)
4 tsp olive oil
1 tsp ginger/garlic crushed
Ingredients for baked potato chips (optional)
1 tsp salt
1 tsp paprika powder/chilli powder
1 tsp coriander powder
1 tsp garlic powder
1 tsp basil
1 tsp oregano
3 tsp olive oil
Method for baking potato chips
1. Leave the skin of the potato as is if you like. I removed the skin this time. Slice it as shown in the picture to bake it to crispy chips.

2. This step is all about giving extra flavor to your chips, you can skip it and add just oil and salt, mix it well.
(Optional): For my chips, I have added 3 tsp olive oil, chilli/paprika powder, basil, coriander powder, oregano, garlic powder and mixed it.

3. Place the potatoes on the baking tray such that each piece is separated from each other(as shown in the picture).

4. Preheat the oven to 200 degree celsius or 392 degree fahrenheit. Once the oven is ready, place the baking tray in it for overall 35 to 40 minutes.
5. Remove the baking tray in between at 15 minutes interval and give the potato slice a flip and place the tray back in the oven. You can occasionally check to see if the potatoes are done.
Note: If you like your chips to be more crispy, you can the potatoes inside the oven by turning of the oven for 5 to 8 mins.
Method for chicken
Marinate the minced chicken by adding 2 tsp olive oil, 2 tsp chilli/paprika powder, 1 tsp garlic powder, 1 tsp coriander powder, 1 1/2 tsp salt, 1 tsp cumin powder and freshly squeezed lemon juice.
To a pan on the stove on high heat, add 4 tsp of olive oil, add diced onions and saute it to become translucent. Then add diced tomatoes and crushed ginger/garlic and cook it for 2 minutes.
Add the minced chicken and add all the spices(cumin powder, chilli powder, coriander powder, salt, basil, oregano, quantity mentioned in the ingredients for chicken above). Give it a good mix for 3 minutes and cook it on medium heat for 8 minutes.
Transfer the chicken to a plate and enjoy. For topping you can add salsa/avacado/cheese/hummus etc. For my topping I have added fresh coriander and diced tomatoes and cheese. Also fresh cheese as dip.
Guacamole as side dip
Cut avocado and mash it using fork.
Add garlic paste or finely diced garlic, tomatoes, salt and cilantro and give it a mix and enjoy!
