Sabudana Vada or Tapioca fritters

My first deep fry dish is here! It is a traditional deep-fried snack from Maharashtra, India. While there are many recipes made out of Tapioca, this recipe sets the stage with its crispness from outside and soft and light texture from inside.
Ingredients
1 cup sabudana or tapioca pearls
1 potato big
3 fresh green chilies
½ tsp salt
2 cloves garlic crushed
1 tsp ginger crushed
1 onion diced
10 gms fresh coriander
15 gms roasted peanuts
Method
Soak the tapioca pearls with water in a bowl for overnight or up to 6 to 8 hours.
Boil the potato and cook it for 12 minutes. Once cooked, mash the potato after peeling the skin of it.
To a bowl, add tapioca pearls after draining the water from it. Add mashed potato, onion, ginger, garlic, salt, roasted peanuts, fresh coriander, and chilies and mix it well.
To a deep frying pan on the stove, add cooking oil of your choice until you think the fritters could submerge.
Once the oil is hot, take a spoon of the mix and make shape like fritters.
Place the fritters in the pan and fry it for 2 to 3 minutes on each side. Remove and place it on a paper towel for the oil to soak.
Enjoy it with dips of your choice with your evening tea. I went with my red chutney as the dip.
