It’s only two days for Christmas. I have been wanting to make these handful ingredients based cookies for some time now and managed to make it today for the first time. Did not manage to do a good job with icing, I hope it gets better next time.
Serving: 40 to 45 cookies
Total time: 2 hours
Cookies
Vanilla cookie
Vanilla cocoa cookie(cocoa is only for color)
Strawberry jam butter cookie
Ingredients
One and a half cup of powdered sugar
Two cups all-purpose floor
¼ tsp of salt
½ tsp of baking powder
1 tsp of vanilla extract
100 gms of butter
¼ cup of cocoa powder(optional)
2 spoons of strawberry jam or any jam of your favorite
Icing
Four to five spoons of powdered sugar (optional)
Method
To a mixing bowl, add butter and whisk it.
Add the powdered sugar to the butter a few spoons of it at a time and whisk it.
Add all-purpose flour, salt, baking powder, and vanilla extract, to the bowl, and mix it well until it becomes cookie dough-like consistency.
Separate the dough into three different portions to make the cookies mentioned above.
Take one portion of the dough to a bowl and add ½ spoon of vanilla extract and mix it well.
Mix the cocoa powder and 2 spoons of powdered sugar in a bowl with 2 spoons of water and make a glaze-like consistency.
Take the second portion of the dough to a bowl and add the cocoa mix to it and two spoons of flour and mix it well.
Place two portions of dough separately on two different parchment papers and place another two different parchment papers on top of the dough. Roll the dough using a rolling pin.
For the third portion of dough, place it in a bowl and let it chill.
You can let this preparation chill for 20 minutes for better texture.
Remove the rolled dough from the refrigerator and remove the parchment paper on the top. Use any shape you have or cut of any shape you like and place it on the baking tray.
Take the third portion of dough, make small balls and place it on the baking tray. Make a hollow hole in the middle and add strawberry jam to it.
Preheat the oven at 150 degrees celsius and place the baking tray with cookies in the oven and bake for 20 minutes.
(Optional) To a bowl, add the powdered sugar kept for the icing, add a spoon of water and mix it until it turns into a glaze consistency. Take a piping cover, add the icing sugar, and decorate your cookies with it. Let it chill for an hour or so and enjoy them.
