One of the main mottoes for me is to make desserts that are low in sugar. It is quite difficult to maintain while having sweet tooth. These coconut cinnamon rolls are one of them, it is zero sugar, vegan and can be made with simple steps.
Ingredients(Serves 8 rolls)
125 gms or 1 cup all-purpose flour/wheat flour
6 tsp coconut oil
6 tsp ground cinnamon
100 ml oat milk
⅛ tsp salt
1 tsp nutritional yeast
1 tsp vanilla extract
50 to 70 gms of desiccated coconut
1 ½ baking powder
Method
To a bowl, add all-purpose flour, 2 tsp ground cinnamon, nutritional yeast, baking powder, salt, and mix it.
Then add oat milk, vanilla extract, and 2 tsp coconut oil and mix it. Knead it for 2 minutes and keep the dough aside for a minimum of 30 minutes to 2 hours.
To a cup, add the remaining coconut oil, ground cinnamon, and desiccated coconut. Mix it to paste consistency and keep it aside.
Take the dough, and make ¼ inch flat like a square shape using a rolling pin. Then take the mix from the cup and spread it across. Now roll it to look like a log and cut horizontally into multiple pieces.
Grease your baking tray and place the rolls. Preheat the oven to 180-degree Celsius and pop the baking tray into it and bake for 20 minutes.
Enjoy the rolls by sprinkling ground cinnamon and honey on top. Or any toppings of your choice.
