Carrot Cake

It’s been a while since I posted here. I made a classic carrot cake today. Did not try to make a healthy one this time, sometimes it is okay to add sugar and make it amazing.
Ingredients
3 big carrots(grated)
150 gms walnuts(chopped)
Optional: 30 gms cashew nuts(chopped)
Optional: 20 gms almonds(chopped)
Dry Ingredients
4 tsp ground cinnamon
1 cup all-purpose flour
1 tsp salt
1 tsp baking soda
Wet Ingredients
50ml vegetable oil
3 eggs
200 gms sugar
1 tsp vanilla extract
Icing
100 gms cream cheese
(optional)50 gms greek yoghurt
100 gms powdered sugar
(optional)3 tsp of orange juice
Method
Let’s prepare wet ingredients first. To a bowl, add vegetable oil, sugar and whisk it. Add eggs, vanilla extract and continue to whisk it until it turns out to a fine liquid paste.
For dry ingredients: In another bowl, add all-purpose flour, ground cinnamon, salt, and baking soda. Mix it well.
Now mix the dry ingredients into the wet bowl. Mix it until the consistency is a thick liquid paste.
Add grated carrots, walnut, cashews, almonds, and give it another mix until everything is well combined.
Grease the baking tray with vegetable oil and pour the batter into it. Tap the tray to give it good shape.
Preheat the oven at 180-degree celsius and pop the tray in the oven for 35 mins.
For icing:
To a bowl, add cream cheese, powdered sugar, greek yoghurt and whisk it until it turns to a creamy liquid paste. Add orange juice if you like for the flavour and whisk to combine well.
Once the cake is ready, top it up with icing and chopped walnuts on top.
